The ingredients
Eggs – 5
Bittersweet chocolate (not unsweetened), chopped – 180g
Sugar powder- 130g
Milk- 5cl
Cacao powder -40g
Butter- 10g to be used for the soufflé dishes
..On y va! :
1 -Generously butter the soufflé dishes and sprinkle with sugar
2- Let them rest in the refrigerator
3- Preheat oven to 200 C°
4- Separate the eggs whites from yolks
5- Melt chocolate in a metal bowl set over a saucepan of barely simmering water, stir occasionally until smooth while adding 70 g of sugar and milk
6- Remove bowl from heat and stir in yolks
7-Beat whites with a pinch of salt with an electric mixer at medium speed until they just hold soft peaks
9-Little by little add sugar while continuing to beat at medium speed, then beat at high speed until whites just hold stiff peaks
10-With the help of a putty knife add it to the chocolate mixture
11-Spoon into soufflé dishes and even out

12-Bake in middle of oven for 30 minutes ( never open the oven to check!)
13- Serve immediately and… immediately enjoy!
